Crankees Pizzeria is Nashville's one and only purveyor of authentic homemade wood-fire oven Italian pizza.
Our wood-fired pizzas are Neapolitan-inspired. The Neapolitan tradition began in Naples, Italy and designates strict guidelines for authentic Neapolitan pizzas. We strive to make our marinara and margherita pizzas as close to the traditional Neapolitan style as possible – crust made with “00” flour and not more than 3mm thick, San Marzano tomatoes, baked in our wood-fired oven for no longer than 90 secs. We build our other pizzas upon the same principles, and top them with the best, most fresh ingredients we can find locally. Our meats are Italian and American salumi (cured meats), the vegetables procured from local farmers’ markets or our home garden, and our mozzarella is fresh fior di latte.
We do authentic catering spreads and serve 10” personal size pizzas, made fresh to order.
Our “Di Fiore Forni” wood-fired pizza oven hails all the way from Italy. “Di Fiore Forni” translates from Italian to “Flower Ovens.” Carl at Tuscany Fire wood-fired ovens, out of New Haven, CT was our middle man. The model 25 was chosen as it is built to be mobile. The oven is ideal at 905 °F and pizzas cook in a mere 60 – 90 seconds.
The 1991 GMC step van used to be a uniform truck. It took months to strip the old white and green paint to reveal the aluminum underneath, and we think it was worth it. We decided to hand-paint the logos in homage to the hand-painted business signs throughout Nashville.
